    Prepare the aromatics

    Mince the shallot, grate the garlic and ginger, and coarsely grind the toasted sesame seeds.

    Build the flavor base

    Warm the sesame oil over medium-low heat and sauté the garlic, ginger, and shallot until fragrant. Add the pork, raise the heat to medium, and cook until no pink remains. Mix in the spicy doubanjiang and miso without letting them scorch, then stir in the sesame and sugar.

    Expected result for “Build the flavor base”: The pork has no pink spots and the miso-chili mixture coats it without scorching.

    Simmer the broth

    Add the sake and chicken stock, bring to a gentle simmer, and season to taste with salt and white pepper. Cover and keep at a low simmer while the noodles cook.

    Cook the noodles

    Boil the ramen noodles in a separate pot until just al dente, following the package timing, then drain thoroughly.

    Expected result for “Cook the noodles”: The noodles are flexible and glossy but still keep their shape when lifted.

    Assemble and serve

    Divide the noodles between two warmed bowls and ladle over the hot broth. Finish with chashu, ramen egg, corn, nori, and sliced green onion as desired, then serve immediately.
